I used the provided script/build-dune-fem-howto.sh with minor modification (attached as well) to specify the compiler and the installation path.
All dune-modules (except the dune-fem-howto) are from the master branch. dune-fem-howto is from the releases/2.5.
I'm using GCC 6.2.
