Resolve "Release version 1.1"

What does this MR do?

Updates master to follow with 1.1 release and releases version 1.1.

  • Bump version 1.1.0-git
  • Create branch releases/1.1 and:
    • Remove -git postfix in version
    • Lock dependencies
    • Create v1.1.0 tag (signed)
    • Check that debian artifact and docker container are reachable from documentation links
  • Add version 1.1 to the homebrew repository https://github.com/dune-copasi/homebrew-tap
  • Create release in GitLab
  • Update Badge in GitLab
• Added/Updated documentation
• Pipelines passing

• Delete branch option set
• Fast-forwaded git merge is possible
• Updated CHANGELOG.md
